In an era where environmental responsibility is at the top of many minds, LeVeL33 has been forging ahead as a pioneer in Singapore's F&B industry. Their recent re-certification as an Eco F&B establishment by the Singapore Environment Council underscores their passionate commitment to sustainability and responsible business practices. Notably, they were recently awarded the highest Elite status, cementing their position as a leader in eco-friendly dining.
LeVeL33's dedication to environmental stewardship covers many aspects. One is their partnership with Unravel Carbon, which helps them to track and analyse emissions across all scopes, enabling continuous improvement in their sustainability efforts. This data-driven approach empowers LeVeL33 to make informed decisions and implement targeted improvements.
As a microbrewery-restaurant, even their brewing process is geared to enhance sustainability. All of LeVeL33's beers are brewed in-house at their on-site microbrewery, which not only minimises transportation emissions but also provides opportunities for sustainable upcycling. For instance, spent grain from brewing—often considered waste—becomes a versatile ingredient used throughout their enticing menu. From Koji Aged Westholme Wagyu Beef to house-made pasta, beer-infused ice cream, and all house-made breads and crackers, spent grain finds new life in their culinary creations. LeVeL33 proves that sustainability and culinary excellence can go hand-in-hand. They have taken this a step further by partnering with Raffles Quay Asset Management (RQAM) to install a biodigester bin, which processes food waste into greywater, further reducing their environmental impact.
Their commitment extends beyond the kitchen. LeVeL33 has implemented energy-saving technologies, optimised their air conditioning systems, and made the switch to biodegradable materials. Even coffee grounds find new life through a partnership with A1 Environment, where they are repurposed as fertiliser or transformed into eco-friendly products. The team has also partnered with Table Pointer to optimise their operations, leading to a significant reduction in kitchen energy use. Additionally, LeVeL33 also partnered with Resync Technologies Pte Ltd by installing energy and water metering to track consumption in real time.
Sustainable sourcing is another cornerstone of LeVeL33's approach. By prioritising local ingredients—including greens sourced entirely from Singapore—they significantly reduce their carbon footprint while supporting local producers. This focus on sustainably farmed seafood and whole-ingredient utilisation further demonstrates a strong commitment to responsible sourcing and waste reduction.
As LeVeL33 continues to innovate, they are not just serving exquisite meals and craft beers – they are brewing a more sustainable future for the F&B industry. Their journey shows that with creativity, commitment and action, businesses can thrive while making a positive environmental impact.
In line with Singapore's sustainability goals, LeVeL33's holistic approach sets a new benchmark for the industry. From their microbrewery to their innovative menu, every aspect is infused with a commitment to sustainability, proving that excellence in cuisine and environmental responsibility can coexist.
